Breakfast - Cranberry Honey Granola

This is one of my favorite breakfast meals. If you want to try a granola breakfast, you can buy a variety of granola cereals from an organic market or you can make your own. It provides you with fiber, keeps you full and taste yummy.

I used gluten free oats to make mine. You can purchase it from Trader Joe's or Whole Foods.

INGREDIENTS

2 cups certified gluten-free oats
1/2 cup roasted cashews ( lightly salted)
1 cup dried Cranberries
1/3 cup Demerara Brown Sugar
1/8 cup Canola Oil
1/2 cup honey
1/2 cup flax seeds
1 tsp Madagascar Bourbon Vanilla


DIRECTIONS:

Pre- heat oven to 300 degrees F










In a large bowl stir together the oats, cashews, cranberries, flax seeds and sugar.



In a separate bowl, combine the honey, oil and vanilla. Mix.

Drizzle over the dry ingredients, stirring to coat evenly.

Spread onto an un-greased cookie sheet.

Bake for 30 minutes, stirring every 10 minutes to allow even toasting. 

Cool completely. Store in an air tight container. Granola will become crunchier as it cools.

USES

Snacks or cereal.
